Ingredients
- 1 cup of vegan butter
- 1 cup of granulated sugar
- 1 teaspoon of baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon of nutmeg
- 1 teaspoon of vanilla extract
- 2 1/2 cups of gluten free flour ( I always test with Bobs Red Mill 1-1)
- 1 teaspoon salt
- 1/4 cups of dairy free milk
Topping:
- 1/4 cups of granulated sugar
- 2 teaspoons of ground cinnamon
Instructions
- Preheat the oven to 350°F and grease an 8×8 baking pan with vegan butter
- In a bowl cream together the vegan butter and granulated sugar until light and fluffy
- Add in the baking powder, salt, cinnamon, nutmeg and vanilla extract, combine until incorporated
- Next add in the gluten free flour and the dairy free milk one at a time until the dough is soft and together
- In a bowl combine the granulated sugar and ground cinnamon
- Spread the cookie dough in the prepared baking dish evenly and top with the cinnamon sugar mixture
- Bake for 30 minutes until the top is crackly
- Let the bars cool completely before cutting them
Notes
*coat the cookies with a light layer of sugar and cinnamon mixture, you may not use the entire mix
