Description

If you’re a fan of snickerdoodle cookies, you’ll love these snickerdoodle bars! They have all the cinnamon-sugar goodness of the classic cookie, but in bar form. They’re also a bit easier to make than individual cookies, so they’re perfect for when you want a sweet treat but don’t feel like spending hours in the kitchen.


Ingredients

Units Scale
  • 1 cup of vegan butter
  • 1 cup of granulated sugar
  • 1 teaspoon of baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon of nutmeg
  • 1 teaspoon of vanilla extract
  • 2 1/2 cups of gluten free flour ( I always test with Bobs Red Mill 1-1)
  • 1 teaspoon salt
  • 1/4 cups of dairy free milk

Topping:

  • 1/4 cups of granulated sugar
  • 2 teaspoons of ground cinnamon

Instructions

  1. Preheat the oven to 350°F and grease an 8×8 baking pan with vegan butter
  2. In a bowl cream together the vegan butter and granulated sugar until light and fluffy
  3. Add in the baking powder, salt, cinnamon, nutmeg and vanilla extract, combine until incorporated
  4. Next add in the gluten free flour and the dairy free milk one at a time until the dough is soft and together
  5. In a bowl combine the granulated sugar and ground cinnamon
  6. Spread the cookie dough in the prepared baking dish evenly and top with the cinnamon sugar mixture
  7. Bake for 30 minutes until the top is crackly
  8. Let the bars cool completely before cutting them

Notes

*coat the cookies with a light layer of sugar and cinnamon mixture, you may not use the entire mix
