Gluten-Free & Dairy Free Peach Crumble

One of my favorite ways to eat sub-par fruit in the summer is a 1 pan crumble recipe. The base is typically a peach, but you can add strawberries, blueberries or whatever else you have in the fridge if it’s a berry or a stone fruit.

Crumble vs. Cobbler:

A Crumble consists of a crumble texture with oats, butter, and sugar that is sprinkled on top and creates a texture on the top of the baked treat. A cobbler is when there is a biscuit or a cake-like topping to the fruit. I prefer a crumble. There is something so easy and effortless about grabbing a cereal bowl, vegan butter, some sugar, oats, and gluten-free flour, squishing it together with a fork and dumping it on top of your cut fruit. Where a cobbler to me is only good when the biscuit is flaky and light, which is hard to achieve with gluten-free flour.

Staple ingredients in a Crumble:

  • Ripe fruit
  • Maple Syrup
  • Corn Starch or gluten-free flour
  • Brown sugar
  • Vegan Butter
  • Old Fashioned Gluten Free Oats

Gluten-Free & Dairy Free Peach Crumble

I sliced my peaches up this morning to put on my yofurt bowl and after one bite I realized these weren’t stand alone peaches they were baking peaches. To me the fine line is the texture and sweetness. These had a mealy texture and virtually no sweetness. So I sliced up the rest of the peaches that I had on hand (3 in total) and tossed them into a greased loaf pan. In a small cereal bowl using the fork I had, I whipped up the crumble topping in less than 4 minutes the crumble was in the oven baking away. Not only is this recipe deilicious as is, it’s versitle for any fruit you have on hand that just isn’t cutting it as a stand alone fruit.

Ingredients

Units Scale
  • 35 large peaches
  • *option to add other fruit
  • 1 tbsp of maple syrup
  • 1 tsp of corn starch ( I prefer corn starch to gluten free flour)
  • 1/2 cups of old fashioned oats
  • 1/4 cups of brown sugar
  • 1/2 cups of gluten free flour
  • sprinkle of ground cinnamon
  • 1/3 cup of vegan butter

Instructions

  1. Preheat your oven to 350*F and grease  a loaf pan or a baking dish (about 8″)
  2. Slice up your fruit and toss it into the greased pan
  3. Over the fruit, drizzle 1 tbsp of maple syrup and add your corn starch, using a spoon or fork, stir around so the fruit is coated
  4. In a bowl, combine until crumbly but all the flour is hydrated with butter (should stick if you push it together), but loose chunks, the butter, sugar, oats, cinnamon and flour
  5. Top the peaches with the crumble so it forms a textured topping and bake for 45 minutes until the fruit is bubbly
  6. Enjoy with vegan ice cream
