Vegan & Gluten-Free Strawberry Pop Tarts

Drew had a few days off these past few weeks to prep for a big trip he is taking for work and we ended up going to our favorite coffee shop almost everyday for our morning cup. They have the best toast and even a gluten free toaster, cutting board and separate peanut butter so its a place we go all the time because your girl can actually eat there! They also serve these MASSIVE pop tarts and Drew loves to get them. Since we are a gluten-free house, he requested that I whip him up some so we could have them at home! I jumped at this chance because who doesn’t love a strawberry pop tart? 

This recipe is vegan, gluten free and AMAZING! We currently have 1 left and I think Drew and I are at a stand off because we both don’t want to eat it and crush the other persons pop tart craving… it won’t last long though!

Gluten-Free Strawberry Pop Tarts

Vegan & Gluten-Free Strawberry Pop Tarts

Description

Homemade pop tarts not only taste delicious but the they are such a fun labor of love. Filled with sweet strawberries, they are perfect for a spring and summer treat.


Ingredients

Units Scale

Crust

  • 1/2 stick of earth balance butter
  • 1/4 cup of sugar
  • 1/4 cup of almond flour
  • 1 1/2 cups of gluten-free flour
  • 2 tablespoons of ice cold water
  • 1 dash of vanilla

Filling

  • 5 strawberries
  • 1 1/2 tablespoons of granulated sugar
  • 1 teaspoon of lemon juice

Icing

  • 1/4 cup of powdered sugar
  • juice from 1 strawberry
  • 2 teaspoons of water

 


Instructions

  1. In a food processor pulse your crust ingredients together to create a crumbly texture forms
  2. Pulse further until the dough forms into a ball and place your dough in the freezer wrapped in plastic to chill
  3. In a small sauce pan over medium low heat, place your strawberries lemon juice and sugar 
  4. Cook down the strawberry mixture until the strawberries are soft and the sugar is starting to bubble
  5. Put the jam into a blender or food processor until a smooth jam forms
  6. Remove your crust from the freezer and roll into 1/4″ thick slab cutting out 8, 3×3″ 
  7. Place a few teaspoons of jam in the middle of 4 pop tart pastry pieces and place the other piece on top
  8. Seal the edges by pressing a fork along the edges and brush with coconut milk and sprinkle 
  9. Bake for 350°F for 20 minutes until the edges are golden brown
  10. While your pop tarts bake, squish a strawberry into a glass to grab the juice, add the juice to a bowl with the water, powdered sugar and strawberry juice, mix until combined
  11. Cool completely before icing and eating
  12. Once cooled, drizzle each pop tart with the icing
  13. Enjoy!
