The perfect breakfast or afternoon sweet and healthy quick bread. The gluten-free, dairy-free and sugar-free cinnamon streusel quick bread is a perfect light and flavorful snack. Full of delicious cinnamon flavor with a light crumb that pairs perfectly with a cup of coffee.

Bread:
- 1/3 cup of melted vegan butter
- 3/4 cups of maple syrup
- 2 ripe bananas (mashed with no chunks)
- 1 tablespoon of ground cinnamon
- 1 teaspoon of vanilla extract
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1 egg or flax egg (4 teaspoons of water to 1 teaspoon of flax meal)
- 1 1/2 cups of gluten-free flour
Topping:
- 1 tablespoon of maple syrup
- 1/2 teaspoon of cinnamon
- 1/3 cups of gluten-free flour
- 1 teaspoon of semi melted butter
Instructions
- Preheat your oven to 350°F and grease your loaf pan with vegan butter
- In a bowl using your hand mixer or stand mixer beat your bananas until they are smooth with no chunks
- Add in your melted vegan butter, maple syrup and vanilla extract and mix until combined
- Combine your flax egg and set aside if you are using one, if not add your add to your mixer and full incorporate
- Slowly add in your gluten-free flour, baking soda, baking powder, salt and cinnamon
- Mix until fully combined and spread your batter evenly in your loaf pan
- Combine your topping ingredients to a bowl and mix until small crumbles form, spread evenly across the top of your loaf
- Bake for 45-50 minutes
- Serve and enjoy!

- You can omit the topping if you wish
- This recipe was tested with Bobs Red Mill 1:1 Gluten-free Flour
