Peanut Butter Chunk Banana Bread (gluten-free!)

Happy Sunday!! Today has been a morning of baking, coffee & reflections on memories! I use to make peanut butter banana bread weekly when my husband & I were in college! The best thing about banana bread to me is the subtle sweetness of the bananas mixed with the salty yet nutty flavor of the organic peanut butter!

Back when I wasn't as healthy (we all went through that college phase!) I use to add in chocolate chips, but lately I have been OBSESSED with the NuGo bars, especially the Dark line they have!
