Lately, I've been loving the crunch of granola in the morning! Since I'm a huge fan of making things myself and keeping healthy crunchy foods around me for optimal snacking, I whipped up this fast recipe. Its sweet but still has a bit of savory from the oats and the almonds. The nutty smokey almonds mix wonderfully with the cinnamon!

Maple Cinnamon Granola: Preheat the oven to 200° Fahrenheit
In a mixing bowl, combine all the ingredients
Add in the maple syrup and stir until sticky
Lastly, pour in your vanilla extract and give it one last stir
Place the granola on a parchment lined baking sheet and place in the oven for 30 minutes to bake
I love clusters and crunch so I don't stir the granola!
- 1 cup of gluten free old fashioned oats
- 1 cup of chopped unsalted roasted or raw almonds
- 1/3 cup of dried fruit (I used cranberries)
- 1/4 cup of Grade A maple syrup
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon vanilla extract
When it is all done, let it cool for about 20 minutes to let the crunchy pieces harden
Crumble over almond milk, yogurt or eat plain!
