Today is National Pancake day! Drew and I are huge fans of the classic breakfast, and for you ladies out there with allergies, this is the perfect pancake recipe for you! They're fluffy and yummy like a regular pancake just Gluten and Dairy Free!!!
Gluten/Dairy Free Pancakes:
Heat a skillet on the stove and coat the base with coconut oil
Place a spoonful of batter onto the pan in a few circle, place a small handful of pancakes into the batter
When the batter starts to bubble, use your spatula and flip the pancakes
Do the same steps above until you are done with your batter!
- 1/2 cup of gluten free flour
- 1/2 cup of coconut flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 tablespoon brown sugar
- 1 cup of almond milk
- 1 cup of carob chips (dairy free)
When the batter is all used, create a heaping stack of pancakes and using your topping of choice (I like a little maples syrup on mine!) eat and enjoy!
