These are the holy grail of GF/DF Banana Bread muffins! Sometimes when you try a dairy and gluten free treat they are grainy and mealy, but these have the same exact texture of the real deal banana bread! Banana Bread is something that I crave! Not many things get me craving but I have always been a huge fan of banana bread and these truly hit my cravings without making my tummy hate me!
Gluten/Dairy Free Banana Bread: preheat your oven to 350° Fahrenheit
In a mixing bowl combine the flour, almond meal, and the oatmeal
Next add in the brown sugar, honey, melted coconut oil and the milk
The baking powder ad cinnamon should be added next with the vanilla
Lastly peel the bananas and using a fork, squish them into the batter
*I like to leave larger pieces along with more of a squish texture in the mix as well! It adds variation while baking!
Next, place in muffin tins and bake for 25 minutes until golden brown and a toothpick inserted comes out clean!
Garnish with fresh sliced bananas and a sprinkle of sugar!
- 3 ripe bananas
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 3/4 cup of brown sugar
- 2 tablespoons local honey
- 2 tablespoons of melted coconut oil
- 3 teaspoons baking powder
- 3/4 cup of almond milk
- 1 1/4 cup of almond meal
- 1 1/4 cup of gluten free flour
- 1 1/4 cup of gluten free oats
