Valentines day is a hard day for a lady who is allergic to Dairy and to Gluten, so after curbing my cravings on the day of chocolate, I decided to indulge. I am a huge fan of rice krispie treats and feel that they are the perfect sweet when you want something easy and quick! I also love peanut butter so I made these yummy protein packed treats to pack a punch for your daily protein and your taste buds!
Paige's Protein Krispies:
In a medium sized sauce pan, melt the coconut oil and make sure it thoroughly coats the bottom and sides of the pan
Pour in half the marshmallows, wait until they melt while stirring on a medium heat, then pour in the rest
Add in the peanut butter
With the heat on medium, pour in the rice cereal 3 cups at a time and make sure the melted peanut butter and marshmallow mix coats all the cereal *repeat with all the rice
On a piece of parchment paper, pour the coated rice cereal onto the parchment and smooth into an even thickness
*I leave the edges natural because thats what makes them look homemade and fun!
For the frosting, whip the coconut oil, protein, sugar, cocoa powder and the vanilla until smooth
*if you like a wetter frosting, add in some almond or regular milk
- 6 cups of rice cereal
- 10 oz bag of large marshmallows
- 1 tablespoon coconut oil
- 1/2 cup of creamy peanut butter
Chocolate Protein Frosting:
- 3/4 cup of cocoa powder
- 1/2 cup of powdered sugar
- 1 serving of vegan chocolate protein powder (2 scoops)
- 1 teaspoon vanilla extract
Place the rice krispies in the freezer to set for about 15 minutes
Remove the krispies and coat the tops with the frosting and freeze again to set (about 10 minutes)
Take them out of the fridge and cut into 2 inch pieces! Eat immediately because they are so yummy!
The perfect treat for kids, dairy free and gluten free individuals!
