Like most people out there, I just can't say no to great ice cream! There really isn't anything quite like it! Its creamy and sweet, yet cold and just oh my goodness delicious. Now that my mouth is watering, let me share with you my favorite "healthy" alternative to ice cream.
YES! I said HEALTHY.
This really is a healthy choice. It's just frozen bananas, peanut butter and some cocoa powder.
Can you say yum??!! This is why it is called a nice cream! It is truly nice to you and you can enjoy it just like ice cream!
In a food processor, blend the bananas for about 3-5 minutes until the bananas are creamy (they start to crumble and then turn into a creamy texture)
Add in the cocoa powder, peanut butter and the maples syrup
Pulse for about 4 more minutes
To crush the almonds, I slam my hand down on them for a few minutes (variation in size is best)
Mix together all ingredients and place on a parchment lined baking sheet in the oven for 7 min
- 3 bananas sliced and frozen
- 4 tablesoons crunchy or creamy peanut butter
- 1/3 cup unsweetened cocoa powder
- 2 tablespoons Grade A Maples Syrup
Almond Brittle oven at 350 degrees Fahrenheit
- 1 cup crushed and whole almonds
- 1/4 teaspoon cinnamon
- 1/4 cup of natural local honey
This is such a fast and simple recipe that I find myself making it all the time for a sweet but really healthy treat. It is so easy to then place in a tupper ware and save for a few days (if it even lasts that long :) )
