Strawberry Streusel Muffins

What can be more summer than fruit infused foods! I mean wait why did I say foods when my whole life is literally baked sweets!!! Okay, let me rephrase this: What can be more summer than fruit infused sweet treats!  

Strawberry Streusel Muffins:

Combine the flour, baking powder, salt and sugar into a bowl

Add in the melted butter and stir into the dry mixture

Incorporate the egg, vanilla and the strawberries

Mix in the strawberries gently so they don't get squishy

Place in cupcake tins and preheat the oven to 350 Degrees Fahrenheit 



Zest the lemon into the bowl and mix in the brown sugar, vanilla, butter and oats. 

Using your hands or a spoon mix together to form a lumpy paste (yummy sounding right?!)

Place a tablespoon of streusel on top of the muffins and place in the oven

Bake for 20 minutes

- 2 cups all purpose flour

- 2 teaspoons baking powder

- 1/4 teaspoon salt

- 1 stick of melted butter

- 1 cup of brown sugar

- 1 large egg

- 2 teaspoons vanilla extract

- 2 cups strawberries diced into random sized chunks

Streusel Topping:

- zest of 1 lemon

- 1/4 cup brown sugar

- 1/2 teaspoon vanilla extract

- 1 tablespoon melted butter

- 1/2 cup old fashioned rolled oats
