Cinnamon Swirl Coffee Cake

Coffee cake, contrary to popular belief does not in fact contain coffee.... it just is a delicious cake that can be eaten with coffee or just all day everyday! I personally am a HUGE fan of coffee cake! Its moist and has a good crumb as well as a rich buttery flavor!

If you have read my previous posts, I love cinnamon, it is the best spice in my opinion. So it was fitting that I decided upon the cinnamon swirl coffee cake!

When deciding on whether or not to make this cake into a loaf, an actual cake, or a bundt the option is totally up to you and how you feel it would look the best for your presentation! If I was mass baking these for a shop, I would do a loaf and cut thick slices, for my purpose; my dad and boyfriend eating them, I went for the cuter and more delicate mini bundt cake preparation. Either way you decided, the execution of the cake is exactly the same!

Cinnamon Swirl Coffee Cake: preheat the oven to 400 degrees Fahrenheit

In a bowl or stand mixer with a paddle attachment, cream the butter and the sugar

Pour in the vanilla extract and the eggs and beat until they are fully incorporated, then mix in the baking soda

Add in the flour and the greek yogurt alternating mixing until they are all incorporated and the batter is thick and creamy

Mix together the cinnamon and granulated sugar in a separate bowl

Grease your baking pan of choice, and pour in half of the batter, pour evenly around the entire cake the cinnamon and sugar mix

Dump the rest of the batter on top of the cinnamon sugar

2 sticks of unsalted butter

- 1 1/2 cups of granulated sugar

- 1 teaspoon vanilla extract

- 1 cup of non fat plain greek yogurt

- 3 eggs

- 1 teaspoon baking soda

- 2 1/2 cups of all purpose flour (unbleached)


- 1 tablespoon ground cinnamon

- 1/4 cup granulated sugar


Using a whisk mix together the sugar and the vanilla, slowly add in the water and mix until its a thick creamy texture!

Drizzle the frosting on the top of the cake and it will naturally fall down the sides!


- 1/2 cup of powdered sugar

-1/4 teaspoon vanilla extract

- 1 tablespoon water

Place in the oven and bake for 8 minutes at 400 degrees Fahrenheit and then drop the heat to 350 degrees Fahrenheit and bake for an additional 30 minutes until a tooth pick inserted comes out clean. Wait about 40 minutes to remove from the pan and an additional 30 minutes to glaze! Enjoy!
