Brownie Pops with Chocolate Buttercream

Yea...... you'll really want to try these. I mean chocolate soft brownie centers, with crunchy outsides and a sweet chocolatey frosting......I MEAN YUMMY to the EXTREME! I love brownies, they are just the best little treat. Crunchy edges and soft gooey centers. So good. I felt that these perfect treats needed a little mix up. 

This time, I added white chocolate chips and topped these brownies with frosting. So decedent. I want to eat them now just talking about them!

I always make my frostings while my cakes, cupcakes or brownies are baking. By making them at the same time, the frosting is freshly whipped and soft by the time your sweets are cool enough the cover!

Brownie Pops: preheat the oven to 350 degrees Fahrenheit, grease a 8x8 baking pan

In a mixing bowl, combine the butter, sugar and the eggs (one at a time)

Add in the cocoa powder first! (this is crucial to do when the batter is still super wet, so the powder doesn't spray out of the bowl

Then add in the salt, baking powder and the flour

Again, add the flour one 1/4 cup at a time

Next fold in the chocolate chips 

Bake for 30 minutes until the middle is moist but fully cooked, insert a toothpick and make sure it comes out clean


Beat the butter, powdered sugar and vanilla extract together in a mixing bowl with the whisk attachment

Add in the milk and then the cocoa powder

Whip for about 5-6 minutes until the frosting is thick and very smooth!


- 2 sticks of butter (unsalted)

- 1 cup of granulated sugar

- 2 eggs

- 1 teaspoon vanilla extract

- 1/2 cup of unsweetened cocoa powder

- 3/4 cups all purpose (unbleached) flour

- 1/4 teaspoon salt

- 1/4 teaspoon baking powder

- 1/2 cup of white chocolate chips

Chocolate Buttercream:

- 1 stick unsalted soft butter

- 1 cup powdered sugar

- 1 teaspoon vanilla extract

- 1/2 cup unsweetened cocoa powder

- 1/4 cup milk (whole or anything you have)


After the brownies are done in the oven, let them cool for about 15 minutes until they are warm. Flip the entire pan of brownies onto a flat surface (I use parchment paper). Break off small sections about 1 teaspoon in size. Roll in your hand to form a ball shape and place on a plate to let cool. Repeat until the batter is done.

Chill the brownie pops for about 10 minutes so they are formed. When they are formed, dip the tops of the brownie pops into the frosting that you have prepared!

And then promptly place a brownie into your mouth! You won't regret it! They are so yummy!
