I’m Paige, a professional food photographer and recipe developer. Being diagnosed with celiac disease made me realize there weren’t enough tasty gluten-free recipes that are easy to make and fun to eat! I have learned a few things in the last two weeks

I have learned a few things in the last two weeks of sugar-free january. And it doesn’t involve my love for this refined sugar free banana bread!

1. I am a snacked during the day rather than a meal gal - okay I always knew this, and I hate breakfast (my sister doesn’t understand me!), but when you work at an office you don’t snack as much. At least I didn’t. It would take be about 2 hours to eat my lunch between interruptions, work and just general business. Now being at home, I don’t have to “prep” my yogurt parfaits and so I just eat all the items separately haha!
2. My mid afternoon snack...was usually a bag of @smartsweets or @starburst . That little burst of candy held me over until I got home from work and could make a proper snack or dinner. With sugar-free january, I have missed that, so I am STARVING by dinner

this 𝐠𝐥𝐮𝐭𝐞𝐧-𝐟𝐫𝐞𝐞 + 𝐬𝐮𝐠𝐚𝐫-𝐟𝐫𝐞𝐞 𝐛𝐚𝐧𝐚𝐧𝐚 𝐛𝐫𝐞𝐚𝐝 is a recipe that I make on repeat but haven't shared until now! I have no idea why I have waited so long to share this delicious recipe!

this bread is soft, sweet and so delicious with chunks of dark chocolate. trust me when I say you won't even miss the white sugar in this loaf.

let's talk dark chocolate! not all chocolate is created equally, and I am no expert, but I do love to eat it! When I bake, I typically use dairy-free semi-sweet chocolate or dark chocolate. lately, I have been very into buying 1lb dark chocolate bars and chopping my own chunks. during sugar-free January I strictly use @lilys_sweets for my recipes (they are stevia-sweetened). What a year 2020 was! Over the last year I learned

What a year 2020 was! Over the last year I learned so much about myself, my business, my goals and the values that I hold close to my chest.

The year started out with a bang! I started Dot Digital Media LLC (www.dotdigitalmedia.com), started my graduate degree in digital audience strategy, created incredible partnerships with some of my favorite brands.

.
I learned a ton about relationships, friends and who I want with me through every journey (shoutout to my husband, family and my in-laws).
.
.
Through all the learnings, I am proud to say I’ve grown into a better wife, daughter, friend and client. Instagram is a highlight reel and what I didn’t share, are the moments of sadness, fear and loneliness. Thanks for sticking with me through this year, and just know, we are working together to learn how to navigate the ins and outs.

sugar-free January is here! I love this challenge for so many reasons:
1. it resets my taste buds + hunger queues
2. it is so fun to create recipes that are tasty and sugar-free
3. I find myself choosing whole foods rather than sugar for months after the challenge

Drew and I have been enjoying the downtime playing @gameofkittens drinking mocktails since he is on call for work. We have gotten pretty ruthless with this game! 10/10 recommend! #frontpaigebakes

The holiday season makes me crave chocolate like crazy! Anyone else? I have been healthily indulging on these chocolate pancakes 🥞for breakfast all week! ⁣
⁣
𝐑𝐞𝐜𝐢𝐩𝐞: ⁣
- 1/2 of a ripe banana⁣
- 1 egg⁣
- 2 tsp of cocoa powder⁣
- 2 tsp of maple syrup⁣
- 1 tsp of cinnamon⁣
- 1 tsp of baking powder⁣
- 2 tsp oatmeal⁣
⁣
𝐒𝐭𝐞𝐩𝐬:⁣
- In a small saucepan melt 1 tsp of vegan butter on medium-low heat⁣
- Place your other ingredients in a small blender and blend until smooth, about 1 minute⁣
- Pour your batter into your small saucepan and create either 1 large pancake or 4 cake plate size pancakes⁣
- When bubbles start to form, flip and cook through, about 35 seconds on the second side⁣
- Repeat with the rest of your batter⁣
- Eat with vegan butter and maple syrup⁣
⁣

I made a special trip @traderjoes when we moved to Texas just for their gluten-free peppermint joe joes. last winter, my sister (@lwbean) brought me a box and I made these melt in your mouth, 𝐠𝐥𝐮𝐭𝐞𝐧-𝐟𝐫𝐞𝐞 + 𝐯𝐞𝐠𝐚𝐧 𝐩𝐞𝐩𝐩𝐞𝐫𝐦𝐢𝐧𝐭 𝐜𝐡𝐨𝐜𝐨𝐥𝐚𝐭𝐞 𝐜𝐡𝐮𝐧𝐤 𝐜𝐨𝐨𝐤𝐢𝐞𝐬 (a true mouthful 😉)⁣

𝐫𝐞𝐜𝐢𝐩𝐞: 𝐚𝐩𝐩𝐥𝐞 𝐬𝐩𝐢𝐜𝐞 𝐜𝐨𝐜𝐤𝐭𝐚𝐢𝐥⁣
- 4 oz of vodka⁣
- 1 tsp of cinnamon⁣
- 8 slices of fresh apple⁣
- 1 handful of ice⁣
- 6oz of fresh apple juice⁣
- 5 oz of Holiday Cheers @healthade kombucha⁣
1. In a shaker add your cinnamon, apple slices, ice, apple juice, and kombucha, shake until combined (about 15 shakes)⁣
2. shake vertically for less pressure build-up⁣
4. pour with a strainer into 4 coupe or old fashioned glasses + enjoy with a garnish of apple⁣
