My favorite part of apple pie is for sure the inside of the pie! The soft tangy apples with the cinnamon just hits the spot when fall rolls around! Vegan Chocolate Meringues

I always thought that making meringues were EXTREMELY hard to make and that I wouldn't be able to pull them off. Well you guys! They really aren't that hard at all and I think they might be my new favorite thing to make! I headed to the grocery store today and grabbed a few ingredients and came home inspired! Whipped up my aquafaba and went to town! They are delicious, creamy and melt in your mouth... not to mention vegan also!

Vegan & Gluten-Free Pumpkin Bread Cookies

I love these pumpkin cookies so much! They taste like fall, have just the right amount of spice and really fill me with warmth! There is something so delicious about a pumpkin bread cookie that just makes you feel alive! When I was younger (and before I had celiac) my sister and I would bake pumpkin bread mix from Trader Joes about every 3 days and eat the whole loaf ourselves. These taste exactly like that bread but in little bit size cookies! Trust me they are dangerously good and you won't be able to stop!
