Peach Pie! (Vegan and GF Free!)

Peaches are one of the best parts of summer! They are sweet, tangy and leave you so satisfied! Each bite comes with chin dripping juice and smiles all around. Nothing is better than a good peach pie on a hot summers night with your friends and family around.

Tonight, I opened the window wide, let the breeze fill the kitchen and started peeling peaches for my pie. The sweet aroma filled the air and toasts the kitchen of a scent only found in the heart of summer.

Peach Pie: Preheat the oven to 325° 

Ingredients:

- 2 cups of all purpose gluten free baking flour

- 1/2 cup of coconut flour

- 1/2 cup of ice cold

- 1 tablespoon of coconut oil (not melted)

- 1/4 cup of brown sugar

- 1 dash of vanilla extract

- 6 tablespoons of ice cold water

- 1 pinch of salt

- 1/2 teaspoon of ground nutmeg

- 1/2 teaspoon of ground cinnamon

Filling:

- 6 peaches, skinned and sliced 1/4" thick

- juice of 1 lemon

- 1 tablespoon corn starch

- (if your peaches aren't super sweet; add in 1/4 cup of brown sugar)

Steps:

1. In a food processor pulse the flour, coconut flour and the sugar together

2. Next, pulse in the cubed Vegan Butter, the vanilla extract and the coconut oil

3. The dough will start to look crumbly at this point

4. Pour in the ice cold water and pulse until a ball forms

5. Dust your surface with some coconut flour and place your dough on the flour

6. Roll the dough to be about 1/4" thick

7. Put the dough in the bottom of your pie dish

8. Taking your peaches, skin them and slice them into 1/4" thick pieces

9. In a bowl, mix your corn starch, peach pieces, lemon juice and sugar (if desired)

10. Take your peach filling and fill your pie dish with them

11. Bake until the pie is golden brown and the peaches are tender (25 minutes)
