Pineapple Glazed Cinnamon GF Dougnuts

Hello! I'm super excited to share today's special holiday! National Doughnut Day! I love a great baked #glutenfree and #vegan doughnut! They are soft and delicious and heck they make you feel great! I decided to try something new. I've been eating so much pineapple lately (it just became available up here in Montana) and I've never tried a doughnut with a pineapple glaze! And we'll, like I suspected, it is delicious! The tangy from the fruit mixes well with the spice in the cake doughnut along with the sweet glaze. It was a win win kitchen experiment today! Gluten Free Cinnamon Cake Doughnut: Preheat your oven to 350° and grease your doughnut pan

- 1/2 cup of melted coconut oil

In a mixing bowl, melt your coconut oil and stir it into your sugar

Next, add in the coconut flour and the peanut butter until the texture is super crumbly

Pour in the almond milk and your cinnamon and stir again

Lastly add in your vanilla and give it one last stir

*the texture should be crumbly

- 1 cup of coconut flour

- 2 tablespoons of creamy peanut butter (it makes them creamier and you can't taste the PB)

- 1/2 cup of granulated sugar

- 1/2 cup of almond milk

- 2 teaspoons of ground cinnamon

- 1 teaspoon of vanilla extract

Taking the dough, pinch it together into small pieces and form it into the doughnut pan

Place the pan into the oven to bake for 17 minutes until golden brown

Pineapple Glaze: place your skillet on the stove and heat to medium

In your hot skillet, place the cubes of pineapple and let them heat for about 2 minutes

Pour in your water and sugar and stir until it starts to bubble

- 1/2 cup of pineapple cut into cubes

- 1 teaspoon of granulated sugar

- 2 tablespoons of water

- 1 1/2 cup of powdered sugar

Your pineapple should start to get more yellow in color and soft in texture. When the pineapple is soft enough to squish, pour into your food processor and pulse until it is a foamy smooth liquid

Take your doughnuts and dip them into the glaze to coat them with a zest of pineapple

Next, after all of your doughnuts are coated, add in your powdered sugar to form a thick glaze

Then dip your doughnuts again into the glaze and set aside to harden
