Blueberry Banana Ice Cream (Vegan)

As many of you might know, I try to stay away from dairy in my own personal eating due to some sensitivities. So when the summer months of heat hit, its always kinda sad when you see your friends eating delicious and creamy ice cream. I was sick of missing out so I started experimenting with banana based ice creams. My last one is seen here, this recipe is rich! It's more of a winter ice cream! I was craving my "Nice Cream" as I call it! (its because its nice for my body :) ) and I whipped up a batch with some blueberries, drizzled with either honey (not vegan) or maple syrup! I also sprinkled on some maple sugar crystals for an extra kick!

Blueberry Banana Ice Cream:

In your food processor, or high powered blender, place your frozen bananas and blueberries

Pulse until a chunky and crumbly texture forms

Place the food processor on "On" mode for about 3 minutes straight and the crumbs will start to form a silky creamy texture

*the day before you want to eat it freeze 2 sliced up bananas and a cup of blueberries

- 2 sliced up bananas (frozen)

- 1/2 cup of fresh or frozen (better if they're frozen) blueberries

- drizzle of honey or maple syrup

 

Once the bananas emulate the texture of soft serve, place the mixture into a freezer proof bin and freeze for about 10 minutes

This will allow you to scoop perfect scoops more easily! If you are hankering for a bite, go ahead and eat it right away!

Most of the time that I make this, I just eat it straight from the food processor! Its so yummy!
