Peanut Butter Cookie Truffles

I've been reading for years about this fad of turning cookies into truffles. I figured that I wanted to try it! I made some cookies a week ago using this recipe here, and let them become stale for about a day. Trust me this was hard! Cookies don't last for more than about a day at my house, so these were hidden just in preparation for this recipe! Its a perfect recipe for when you have left over cookies and want to transform them into something new and inventive without wasting the time and resources you used to make them in the first place! So, all you really need are the stale cookies, some chocolate chips, butter and some extra peanut butter!

No pre heating needed! No bake time!

Peanut Butter Cookie Truffles: yields about 20, 1" truffles

In a food processor, take your cookies and grind them into a crumb

Add in your milk, and peanut butter and pulse until it forms into a ball

Using your hands, pinch small sections of the dough and roll into small truffles and set aside on wax paper

 

- 16 peanut butter cookies

- 1 teaspoon of creamy peanut butter

- 1 teaspoon of butter

- 1/2 cup of semi sweet chocolate chips

- 1 teaspoon of milk

 

Repeat rolling the truffles until all of the dough is used

Then melt in a heat proof bowl the butter and the chocolate chips together in the microwave for about 15 seconds and stir until smooth

Using a fork either coat the entire truffle in the chocolate or sprinkle it on top of the truffles! Its up to your taste buds!

Let cool in the fridge for about 15-20 minutes and enjoy!
