I listened to this extremely inspiring podcast the other day about how you can eliminate certain pains in your body through eating a certain way. Since my allergies to gluten and dairy have increased, I have realized how hard it is to find gluten AND dairy free options. And if you readers are anything like me, the smallest amount of either can really cause a serious reaction!
Today, I was craving a sweet little treat! I always find myself leaning towards peanut butter as my go to flavor! Feeling a little inventive; I felt that today was the day I would create a new no fail 4 ingredient Gluten and Dairy free cookie!
When deciding whether to do a gluten free flour for this recipe (all recipes that are gluten free can be made with regular flour), I use a flour that tends to absorb some of the moisture! A coconut flour works well and so does a gluten free baking flour! I use this one!
Gluten/Dairy Free Peanut Butter Sandwich cookies: Preheat the oven to 350° fahrenheit
In a bowl using a hand mixer cream the peanut butter and the sugar until smooth!
Add the flour and the vanilla extract until the dough starts to form!
Using your hands, roll the dough into round balls and place on an un-greased cookie sheet
When all the dough is balled, using a fork press the tines onto the cookie in a cross pattern (1 cross horizontal and one vertical)
Bake for 10 minutes until golden brown and mildly cracked
Let cool and whip the peanut butter, powdered sugar and vanilla extract to form a smooth frosting!
- 1 cup of creamy peanut butter
- 1 teaspoon vanilla extract
- 3/4 cup of brown sugar
- 3/4 cup of gluten free baking flour OR coconut flour
Peanut Butter Frosting:
- 1/2 cup peanut butter (creamy is preferred)
- 1/3 cup of powdered sugar
- 1/2 teaspoon vanilla extract
When the cookies are cool, frost the bottom side of the cookie *the one without the cross*
Optionally I added some pre made jam to one side and made a peanut butter and jelly sandwich for extra yummies! Trust me these are no fail and truly amazing!
